If you want to go for beer, cars, and castles (preferably not in that order), you should look at:

- Weihenstephaner, Erdinger, and Hofbräu offer brewery tours in English

- BMW in Munich, Audi in Ingolstadt, and Maybach in Neumarkt

- Neuschawnstein, Herrenchiemsee, and Neuburg (with a fest from 27/06 to 29/06 and from 04/07 to 06/07)

Nature

- National Park Bayerischer Wald

- Climb (or take the cable car) up to Germany's highest peak, the Zugspitze in the Alps! You can take a gorgeous train ride from Munich main station there. It's also not far from there to the fairytale castle of Neuschwanstein.
